Who am I?
Cooking professionally since 1992, Robert “Chico” Joice has developed a whimsical style that blends the heart of comfort food with the finesse of fine dining, always highlighting fresh, locally sourced ingredients. Over the years, his career has spanned private chef work, food trucks, catering of all sizes, and leadership in top kitchens. Chico has had the honor of cooking alongside acclaimed chefs, including James Beard Award winners and nominees such as Tom Douglas, Matt Costello, Hugh Acheson, John Sundstrom, and Erik Tanaka.
Before launching his own venture, Chico served as Chef de Cuisine at Heyday Farm, a beloved farm-to-table restaurant on Bainbridge Island, where he spent more than three years deepening his connection to seasonal, sustainable food.
When he’s not in the kitchen, Chico can often be found playing pinball, pickleball, or just about any other game that starts with “P.”
